BLT Kabobs

1 lb. thick-sliced bacon
metal skewers
2 small red tomatoes, quartered
2 small yellow tomatoes, quartered
1 avocado, peeled and pitted
4 slices bread, toasted
bamboo skewers
pepper to taste
Garnish: lettuce leaves


Preheat oven to 375 degrees. Prepare the bacon by accordian-folding the bacon onto metal skewers. Place on baking sheet on rack and cook until bacon is brown and fully cooked. Leave on skewers to cool slightly. Place avocado in a bowl and mash slightly. Spread 2 pieces of bread with avocado. Top with other pieces of bread, making 2 sandwiches. Cut sandwiches into 4 pieces each; set aside. Soak the bamboo skewers in water for about 5 minutes. Remove bacon from skewers; carefully thread several pieces onto bamboo skewers. Add the sandwich pieces, tomatoes, more bacon, tomato and sandwich pieces in desired order and amount. Place on a baking sheet; sprinkle with pepper if desired. Heat broiler to low. Place skewers under broiler until just heated, about one minute, watching carefully so kabobs do not burn. Serve immediately on lettuce leaves. Serves 4.
