Cheddar-Chive Muffins

1/2 c. cornmeal
1 c. all-purpose flour
1 T. baking powder
1 T. sugar
1/2 t. salt
3/4 c. milk
1 egg, beaten
1 T. butter, melted
1 T. fresh chives, chopped
1/2 c. shredded sharp Cheddar cheese


Mix cornmeal, flour, baking powder, sugar and salt in a mixing bowl; slowly add milk, stirring until just mixed. Stir in egg, butter, chives and cheese; pour into greased muffin pans. Bake at 375 degrees for 25 minutes or until tester inserted in muffin center comes out clean. Makes 12 servings.
