4 boneless, skinless chicken breasts 1 c. orange juice 1/2 c. white wine or chicken broth 1/2 T. Italian seasoning paprika to taste 1 onion, chopped 1 tomato, chopped 1/4 lb. sliced mushrooms 1 t. olive oil
Place chicken in a lightly greased shallow casserole dish. Combine orange juice and wine or broth; drizzle over chicken. Sprinkle with seasonings. Bake, uncovered, at 350 degrees for
30 minutes. While chicken bakes, sauté onion, tomato and mushrooms in oil until tender. Spoon vegetables over chicken; return to oven and bake, uncovered, for 30 additional minutes, or until chicken tests done. Serves 4. | |
