4-lb. pork tenderloin
15-oz. can tomato sauce
15-oz. can diced tomatoes
15-oz. can stewed tomatoes
6-oz. tomato paste
1 green pepper, sliced
1 yellow onion, diced
2 potatoes, peeled and sliced
8-oz. pkg. baby carrots, sliced
1 c. instant rice, uncooked
salt and pepper to taste
Place tenderloin in a large slow cooker, fat-side up.
Pour all tomatoes with their juice over tenderloin.
Add vegetables; gently stir in. Cover and cook on
low setting for 6 to 8 hours. About 30 minutes before
serving time, add rice, stirring into liquid in slow
cooker. Cover and cook for another 30 minutes.
Slice tenderloin; serve with vegetables and rice from
slow cooker. Serves 8.
