2 c. cucumbers, peeled, seeded and finely chopped 1/2 c. ripe tomato, finely chopped 1/4 c. red onion, finely diced 2 T. jalapeño pepper, or to taste, chopped 2 T. fresh cilantro, finely minced 1 clove garlic, minced 1/4 c. fat-free sour cream or plain yogurt 1-1/2 t. lime juice 1 t. lemon juice 1/8 t. ground cumin salt and pepper to taste
In a small bowl, mix together vegetables, cilantro and garlic; set aside. In another small bowl, combine remaining ingredients; pour sparingly over cucumber mixture. Cover and chill. As salsa stands, cucumbers will give off liquid. More of the dressing may be added if needed, but add it slowly at first, so it doesn’t get too runny. Serves 6. | |
