Cheddar-Ham Chowder

2 c. water
2 c. potatoes, peeled and cubed
1/2 c. celery, sliced
1/2 c. carrots, peeled and sliced
1/2 c. onion, chopped
1 t. salt
1/2 t. pepper
1/4 c. butter
1/4 c. all-purpose flour
2 c. milk
8-oz. container shredded sharp Cheddar cheese
15-1/4 oz. can corn
1-1/2 c. cooked ham, cubed


In a large saucepan over medium-high heat, bring water to a boil. Add potatoes, carrots, celery, onion, salt and pepper. Reduce heat to medium-low. Cover and simmer for 8 to 10 minutes, just until vegetables are tender. Remove from heat; do not drain. Meanwhile, in a medium saucepan over medium heat, melt butter. Blend in flour; add milk all at once. Cook and stir until thickened and bubbly. Add cheese; stir until melted. Add milk mixture to vegetable mixture in large saucepan; stir well. Add corn and ham. Heat through over medium heat, stirring occasionally. Makes 4 servings.
