2 c. white whole-wheat flour 2 t. baking powder 1/4 t. salt 1 t. cinnamon 3/4 c. milk 1/4 c. honey 2 T. butter, melted 1 t. vanilla extract 2 ripe bananas, mashed Garnish: maple syrup Optional: chopped walnuts
In a large bowl, mix together flour, baking powder, salt and cinnamon. In a separate bowl, stir together milk, honey, butter and vanilla. Slowly pour milk mixture into flour mixture, stir well. Add bananas, stir to combine. Spoon batter by 1/3 cupfuls onto a lightly greased griddle over medium heat. Cook for 2 to 3 minutes, until bubbles begin to form on top, turn. Cook on other side for another 2 to 3 minutes, until golden. Serve topped with maple syrup and garnished with walnuts. Makes one dozen. | |
