Cheesy Zucchini & Beef Casserole

1 lb. ground beef
1 lb. ground pork sausage
2 c. zucchini, diced
1 c. onion, diced
1 c. green pepper, diced
1 c. tomato, diced
1 c. water
1/2 c. shell macaroni, uncooked
2 to 3 t. dried oregano
2 t. salt
2 c. shredded Cheddar cheese
2 c. shredded mozzarella cheese


Brown beef and sausage well in a skillet over medium heat; drain. Add vegetables, water, uncooked macaroni, oregano and salt. Bring to a boil, stirring often. Reduce heat to low. Simmer for 25 minutes, or until vegetables and macaroni are tender and liquid is almost absorbed. Stir occasionally, adding a little more water if too dry. Remove from heat; cover and let stand 10 to 15 minutes. Stir in Cheddar cheese. Spoon into a greased 13"x9" baking pan; sprinkle with mozzarella cheese. Bake, uncovered at 375 degrees until golden and cheese is melted, 5 to 10 minutes. Makes 6 to 8 servings.
