8- to 9-lb. fully cooked smoked
shank ham, skin removed
1/2 c. whole cloves
1-1/4 c. brown sugar, packed
1/2 c. maple syrup
Score top of ham in a diamond pattern, making cuts 1/8-inch deep. Stud with whole cloves. Place ham fat-side up on a rack in a shallow roasting pan. Insert a meat thermometer into center of ham, making sure it does not touch bone or fat. Bake at 325 degrees for 2 to 2-1/2 hours, until thermometer reads 135 degrees. Combine brown sugar and maple syrup in a small bowl; stir well and brush over ham. Bake 20 to 30 more minutes, until thermometer reads 140 degrees. Remove ham to a serving platter; let stand 10 minutes before carving. Serves 16.
