Old-Fashioned Apple Dumplings

2 c. plus 3 T. all-purpose flour, divided
1 t. baking powder
1/2 t. salt
5 T. shortening
1/2 c. milk
2 to 3 t. butter
5 apples, peeled, cored and chopped
sugar to taste
cinnamon to taste
1/2 c. brown sugar, packed
1-1/2 c. boiling water
Garnish: whipped cream


Mix together 2 cups flour, baking powder, salt and shortening. Add just enough milk to moisten and form a ball. Spread on floured surface and roll dough ball with rolling pin to about 1/2-inch thick. Spread the top with butter. Lay apples across the dough. Sprinkle with sugar and cinnamon. Roll up jelly roll-style and seal ends. Cut in slices. Lay flat in a greased 8"x8" pan. Mix together brown sugar, remaining flour and boiling water. Stir constantly until thickened. Pour over apples. Bake at 350 degrees for 35 to 45 minutes. Top with whipped cream. Makes 6 to 8 dumplings.
