Dutch Oven Parmesan Chicken

1 T. olive oil
1/3 c. butter, melted
1-1/2 c. grated Parmesan cheese
1/4 t. pepper
garlic powder to taste
3 lbs. boneless, skinless chicken tenders


Prepare a campfire with plenty of hot coals. Coat the inside of a large Dutch oven with olive oil; set aside. Place melted butter in a shallow bowl; mix together cheese and seasonings in another shallow bowl. Dip chicken into butter; coat with cheese mixture. Arrange chicken in Dutch oven; set on 10 to 12 hot coals in campfire. Add lid; arrange another 10 to 12 coals on lid. Cook for 45 to 50 minutes, until golden and chicken juices run clear, adding more hot coals as needed. May also bake, covered, at 350 degrees for 35 to 40 minutes. Makes 4 to 6 servings.
