Stuffed Beer Brats

1/4 c. butter, sliced
1 onion, sliced
6 bratwurst sausages
12-oz. can regular or non-alcoholic beer
15-oz. can sauerkraut, drained
6 slices bacon
6 hot dog buns, split
Garnish: Swiss cheese slices, horseradish mustard


Melt butter in a Dutch oven over medium heat. Add onion; cook for 3 minutes. Add brats and beer; bring to a boil. Reduce heat; simmer for 5 to 10 minutes. Remove brats to a plate, reserving beer mixture. Cut a V-shaped notch lengthwise in brats. Stuff with sauerkraut; wrap with bacon and fasten with a wooden toothpick. Grill over medium heat until golden and bacon is crisp. Return brats to beer mixture until served. Serve on buns, garnished as desired. Serves 6.
