Spinach & Tomato French Toast

3 eggs, beaten
salt and pepper to taste
8 slices Italian bread
4 c. fresh spinach, torn
2 tomatoes, sliced
Garnish: grated Parmesan cheese


In a bowl, beat eggs with salt and pepper. Dip bread slices into egg mixture. Place in a lightly greased skillet over medium heat; cook one side until lightly golden. Place fresh spinach and 2 slices of tomato onto each slice, pressing lightly to secure. Flip and briefly cook on other side until golden. Serves 4.
