Farmhouse Potato Pie

1 lb. bacon, chopped
1 onion, chopped
8 eggs, beaten
1 lb. potatoes, peeled and grated
2-3/4 c. shredded sharp Cheddar cheese
1/2 t. pepper


Cook bacon and onion in a skillet over medium heat until bacon is crisp and onion is transparent, about 8 minutes. Drain mixture well on paper towels. Combine eggs, potatoes, cheese and pepper in a large bowl; stir in bacon mixture. Spread evenly in a greased 13"x9" baking pan. Bake at 350 degrees for 45 minutes, until set in center; cut into squares to serve. Makes 6 to 8 servings.
