3 c. yellow squash, peeled and diced
1/2 c. onion, chopped
4 eggs, beaten
1/3 c. canola oil
1 c. biscuit baking mix
1/2 c. shredded mozzarella cheese
salt and pepper to taste
Mix all ingredients in a bowl. Pat into a 9" pie plate lightly coated with non-stick vegetable spray. Bake at 350 degrees for 50 minutes to one hour, until set. Let stand for 10 minutes; slice into wedges. Serve warm or cold. Makes 6 to 8 servings.
