1-1/2 lb. ground beef
1 small onion, diced
1 red pepper, diced
1 c. long-cooking brown rice, uncooked
14-1/2 oz. can diced tomatoes
2 c. water
2 t. chili powder
1 t. paprika
1⁄4 t. salt
1⁄4 t. pepper
Garnish: fresh thyme sprigs
Brown beef with onion and red or green pepper in a skillet over medium heat; drain. Stir in uncooked rice and remaining ingredients except garnish. Cover and simmer over low heat 25 minutes, or until water is absorbed and rice is tender. Garnish with fresh thyme sprigs. Makes 6 servings.
