1 c. skim milk 1 c. water 1⁄4 t. salt 1 c. quinoa, uncooked and rinsed 1 t. cinnamon 2 c. blueberries or raspberries, thawed if frozen 1⁄3 c. chopped toasted walnuts 1 T. unsweetened flaked coconut
In a saucepan over medium heat, stir together milk, water, salt and quinoa. Bring to a boil. Reduce heat to medium-low; cover and cook for 15 minutes, or until quinoa is tender and liquid is absorbed. Remove from heat; let stand, covered, for about 5 minutes. Gently stir in cinnamon and berries. Top with walnuts and coconut. Makes 6 servings. | |
