3-lb. boneless pork roast 2 to 3 sweet potatoes, peeled and cubed 1 green or yellow pepper, cubed 1/2 c. apple cider 3 T. brown sugar, packed 1 t. cinnamon salt and pepper to taste Optional: 1 T. cornstarch, 1 T. water
Place pork roast in a 5-quart crockpot. Top with sweet potatoes and
pepper; set aside. In a bowl, mix together cider, brown sugar and
seasonings; spoon over all. Cover and cook on high setting for 3-1/2 to
4 hours, or on low setting for 7 to 8 hours, until roast is tender. Remove
roast to a platter. If desired, combine cornstarch and water; add to
drippings in crock. Cover and cook for several minutes, until thickened.
Slice roast; serve with vegetables and drippings. Makes 3 to 5 servings. | |
