Creamy Shrimp Fettuccine

1 onion, chopped
1 green pepper, chopped
1/2 c. butter
1-1/2 T. all-purpose flour
1/2 t. Cajun seasoning
1 t. green onion, minced
8-oz. pkg. pasteurized process cheese spread, cubed
1 c. half-and-half
1 clove garlic, minced
1 lb. shrimp, peeled, cleaned and chopped
12-oz. pkg. fettuccine, cooked
Garnish: grated Parmesan cheese


Sauté onion and pepper in butter over medium heat. Reduce heat and add flour; cook 15 minutes, stirring often. Add Cajun seasoning and green onion; cook for several minutes longer. Add cheese spread, half-and-half and garlic; cook until cheese melts. Stir in shrimp; cook an additional 10 minutes. Combine sauce with cooked pasta and pour into a greased 2-quart casserole dish. Sprinkle with Parmesan cheese; bake at 350 degrees for 15 to 30 minutes, until bubbly. Serves 8.
