4 potatoes, peeled and grated 2 T. all-purpose flour 2 eggs 1 onion, diced 1-1/2 t. salt oil for frying
Combine potatoes and flour; mix well and set aside. Beat together eggs, onion and salt in a small mixing bowl; pour over potatoes, mixing thoroughly. Heat cast iron skillet over medium-high heat. Add 2 tablespoons oil to skillet, turning skillet to evenly distribute oil. Using a 1/4-cup measure, drop potato mixture into skillet, spreading out slightly. Cook 2 minutes or until crisp; turn and cook other side. Remove from heat and keep warm. Repeat with remaining potato mixture, adding oil to skillet as needed. Serves 10 to 12. | |
