6 hot Italian pork sausage links 2 red peppers, sliced 1 green pepper, sliced 1 sweet onion, sliced Optional: 14-1/2 oz. can diced tomatoes, drained 6 sub buns, split
Add sausage links to a large skillet over medium heat. Cook until outside of sausage are just browned; drain. Reduce heat to low; add peppers, onion and tomatoes, if using, to skillet. Cover and cook for about one hour, until vegetables are tender and sausage is cooked through. To serve, place a sausage on each bun and top with vegetables. Makes 6 servings. | |
