3 T. butter
1/4 c. onion, finely chopped
3 T. all-purpose flour
3/4 t. chili powder
1 t. salt
1/8 t. pepper
1-1/2 c. milk
2 15-oz. cans white hominy, drained and rinsed
8-oz. pkg. shredded Cheddar cheese
In a large saucepan over medium heat, melt butter and sauté onion until tender. Add flour and seasonings; cook and stir until bubbly. Slowly add milk; cook and stir until thickened. Stir in hominy; turn into a buttered 1-1/2 quart casserole dish. Top with cheese. Bake, uncovered, at 350 degrees for 35 to 40 minutes. Serves 6.
