1 T. oil
1 onion, chopped
2 c. mashed potatoes
1 c. roast beef, shredded
salt and pepper to taste
Heat oil in a large skillet over medium heat; add onion and cook until tender. Transfer onion to a medium bowl; mix with potatoes, beef, salt and pepper. Form into 8 patties; return to skillet and cook over medium-high heat until golden on both sides. Makes 8 servings.
