Low-Fat Chocolate Oat Muffins

2 c. oat flour
1/3 c. brown sugar, packed
1/3 c. baking cocoa
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 c. dark chocolate chips
2/3 c. zucchini, finely grated
1 c. non-fat milk
1/3 c. honey
2 egg whites, beaten
Garnish: oatmeal


In a bowl, combine flour, brown sugar, baking cocoa, baking powder, baking soda and salt. Mix well; gently stir in chocolate chips. In a separate large bowl, combine remaining ingredients; mix well. Add flour mixture to zucchini mixture; stir only until well combined. Spoon batter into muffin cups sprayed with non-stick vegetable spray, filling cups 2/3 full. Sprinkle oatmeal on top of muffins. Bake at 400 degrees for 18 to 20 minutes, until a toothpick tests clean. Cool muffin tin on a wire rack for 10 minutes; remove muffins from tin. Serves 12.
