Crispy Oven-Fried Chicken

2 eggs
4 T. butter, melted and cooled
1-1/4 c. corn flake cereal, crushed
1 T. dried parsley
1-1/2 t. poultry seasoning
1 t. dried basil
1/4 t. dried thyme
1/8 t. garlic powder
2-1/2 to 3 lbs. chicken


Beat eggs and butter together in a shallow bowl. In another bowl, toss together cereal and seasonings. Dip chicken pieces in egg mixture, then dredge in cereal mixture. Place in an ungreased shallow 13"x9" baking pan; bake at 375 degrees for 30 minutes. Gently turn; bake 25 to 30 minutes longer, or until juices run clear when chicken is pierced. Serves 4 to 6.
