2 15-oz. cans corn, drained
2 16-oz. cans black beans, drained and rinsed
1 green pepper, diced
1 onion, diced
1 bunch arugula, torn
6-oz. can black olives, drained and chopped
1 tomato, chopped
8-oz. bottle Italian salad dressing
salt and pepper to taste
In a large bowl, combine all ingredients; cover and refrigerate until chilled. Toss mixture gently before serving. Serves 8 to 10.
